Pineapple Mango Salsa

Enjoy this with some chips or add it to your favorite taco!

Ingredients
Chopped fresh pineapple, about 1/2 a pineapple
Chopped fresh mango, about 3 mangos
1 small red onion chopped
1 medium tomato deseeded and chopped
1 small jalapeno deseeded
Cilantro to taste, chopped
salt and pepper to taste
Juice of 1-2 limes or to taste

Combine all ingredients in a bowl and season to taste.

Zucchini Patties

This is one of my favorite appetizers to make when having over a group of people or to start with before a meal. Hope you enjoy them as much as I do… I promise you will always get requests to make them again!
zucchini patties

  • 1 Large Zucchini, shredded
    1-2 tablespoons chopped parsley
    1-2 tablespoons chopped mint or to taste
    1 shallot chopped
    2 cloves garlic
    About 2 tablespoons shredded pecorino romano
    About 2 tablespoons shredded parmesan
    About 2 tablespoons flour
    1 large egg beaten
    Salt
    Olive Oil
    Pinch of red pepper flakes (optional)

1. Shred zucchini and place in colander. Sprinkle evenly with salt and let excess water drain about 20-30 minutes.
2. Combine parsley, mint, shallot, garlic, pecorino romano, parmesan and red pepper flakes in large bowl.
3. Add zucchini, egg and flour and mix gently until combined.
4. Heat olive oil in pan and using an ice cream scoop, scoop zucchini mixture into oil and press gently to form patties; cook 4-5 minutes per side.

Greek Salad

I always order this salad at one of my favorite restaurants and tried my best to copy the recipe. Hope you enjoy!

For the dressing:

  • 1/2 cup red wine vinegar
    1/2 cup olive oil
    1 teaspoon sugar
    1/2 teaspoon salt
    juice of 1 lemon
    1 tablespoon oregano leaves
    3-4 garlic cloves minced

Mix ingredients together and let the dressing marinate for 30+ minutes

For the salad:

  • 3-4 tomatoes
    2-3 cucumbers seeds removed and chopped
    1-2 sweet red, yellow or orange peppers
    1 small red onion chopped
    1 cup feta cheese
    Chopped lettuce or red cabbage

Once the dressing marinades mix with all vegetables EXCEPT lettuce and/or cabbage. Serve with lettuce/cabbage when ready to eat.
