Wasn’t really sure what to make for dinner last night so I threw a few spices together to make a rub and baked these chicken breasts. Turned out pretty good so I figured I would share it. This recipe is good along or would make a good addition to salads and to add to a wrap.
Add all spices to a bowl and mix until combine. Brush chicken breasts with olive oil or spray each side with cooking spray. Season both sides of chicken breast with spice rub and bake at 400 degrees 25-30 minutes or until internal temperature reaches 165.
I was craving something Asian without all the calories in take-out. I hope you enjoy this dish.
1/4 cup honey
1/2 cup tomato paste
1/3 cup soy sauce
About 3 tablespoons white wine vinegar
1 teaspoon sesame oil
1 teaspoon onion powder
1 teaspoon sriracha or more to taste (I used 2 teaspoons)
3-4 garlic cloves minced
1 teaspoon water
Black pepper to taste
2 tablespoons flour or cornstartch
Scallions and sesame Seeds
Season chicken breast with black pepper to taste and add to slow cooker. In a small bowl combine honey, tomato paste, soy sauce, white wine vinegar, sesame oil, onion powder, sriracha, garlic, and 1 teaspoon of water and mix until combined. Pour over chicken breasts and cook on low 3-4 hours.
After 3-4 hours remove chicken and shred with fork. Mix flour or cornstarch with about 1/4 cup water until combined (no lumps) and add to slow cooker and cook another 15 minutes or until sauce is thickened.
Made these on the grill last night and they were delicious! I recommend marinating it for 3-4 hours prior as yogurt is a natural tenderizer for the chicken. I used chicken breast for dinner last night.
1 package chicken breasts or thighs
1 cup plain yogurt
2 cloves minced garlic
chopped cilantro to taste
1 teaspoon cumin
1 teaspoon paprika
salt and pepper to taste
1 tablespoon olive oil
Add yogurt to bowl and all ingredients except chicken and mix until well combined. Pour mixture over chicken breasts and marinate 3-4 hours. Cook on hot grill 5 minutes per side or until done.
3-4 chicken breasts
3 tablespoons Dijon mustard
1 tablespoon fat free or light mayonnaise
Juice of 2 small limes. zest of 1 lime
1/2 teaspoon pepper
1 garlic clove minced
Salt to taste
Parsley to taste
About 3/4 teaspoon pepper
If baking pre-heat oven to 350 degrees. Mix all ingredients together and pour over chicken and make sure to coat all sides. Bake for 15 minutes then finish off in broiler for 5 minutes or until golden brown in color.
To grill mix all ingredients together and pour over chicken to coat all sides. Grill on outdoor/indoor grill 5 minutes per side or until cooked through.
If you’re like me and enjoy eating middle eastern food you may have once had kofta kebabs. Traditionally made with beef or lamb.. I decided to use ground chicken for a more healthy option.
1 pound ground chicken
3-4 garlic cloves, minced
2 shallots peeled and chopped
1 tablespoon minced ginger or 1/2 inch piece of ginger chopped
3 tablespoons fresh parsley chopped
1 tablespoon fresh mint chopped
2 teaspoon cumin
2 teaspoon coriander
1 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
Mix all ingredients in a large bowl until combined. Form size patties as desired and cook on stove top 5 minutes per side. You can also grill the meat by wrapping it around skewers or grill them directly as patties. This goes well with my cucumber salad and cilantro lime rice recipes.
Cilantro Lime Chicken – I usually use this recipe when I’m making tacos or quesadillas
1 package chicken breast or thighs cut into cubes(thighs have more flavor, be sure to trim the fat)
1/8 cup red wine vinegar
1/2 lime juiced
1/2 teaspoon salt (or to taste)
1 green onion chopped (optional)
1/2 teaspoon black pepper (or to taste)
2 garlic cloves minced
1 teaspoon white sugar
1/2 cup chopped fresh cilantro
Saute chicken on stove top over medium heat about 10 minutes. Add the red wine vinegar, lime juice, salt, pepper, garlic green onion (optional), and sugar and simmer another 10 minutes. Top with fresh cilantro.
If you decide to make tacos heat tortilla shells over low heat about 2 minutes each side, fill tacos with chicken, tomato, lettuce, cheese, and avocado – or get as creative as you want!
