Need a quick healthy fish taco idea? Hope you enjoy these just as much as I did
2 tilapia fillets about 4-6 ounces
1 small onion chopped
4 garlic cloves chopped
Chopped cilantro to taste
2 tomatoes chopped
1 jalapeno seeds removed and chopped
1-2 limes juiced (depending on your taste)
1 tablespoon olive oil
Salt and pepper to taste
Corn or flour tortillas
1 avocado, sliced or chopped
Heat 1 tablespoon olive oil in pan and add onion and garlic. Cook 3-4 minutes until softened. Add tilapia fillets and cook about 3 minutes per side. Once cooked break up tilapia in pan and add tomatoes, jalapeno, lime juice and season with salt and pepper to taste. Cook 2-3 minutes until heated through. Sprinkle desired amount of cilantro on top.
In a separate pan, heat flour tortillas 1-2 minutes per side and add fish mixture. Top with sliced avocado.
For additional flavor mix sliced avocado in a small bowl with salt (to taste), juice of 1 lime and cilantro before topping on fish.
