I’ve always wanted to try making my own salsa but never really tried to until now. I loved how it came out and I hope you do too!
Roasted Salsa – recipe follows
- 3 Large tomatoes, quartered
- 1 medium onion chopped
- 5 cloves garlic kept whole
- 1 jalapeno seeded and cut lengthwise
- 3 tablespoons olive oil
- 2 limes
- Cilantro chopped
- 1/2 teaspoon salt and pepper (or to taste)
Pre-heat broiler. Combine tomatoes, chopped onion, jalapeno and garlic. Coat all vegetables with enough oil. Broil vegetable about 6 minutes, stir, then broil about another 6-8 minutes. Add roasted vegetables to food processor with juice of two limes, salt and pepper to taste, and chopped cilantro and blend in food processor until combined.
