Coconut Rice

Getting bored of plain rice? Try this coconut rice recipe to add to your Asian inspired dinner

This recipe goes well with these two recipes:

The rice may look like any other plain rice but is packed with flavor


  • 2 cups rice
  • 1 table-spoon brown sugar
  • 1 table-spoon minced garlic
  • 1 table-spoon butter
  • 1 table-spoon chopped scallion whites
  • 1/2 cup chicken broth (6 oz)
  • 1 5 oz can coconut milk
  • Salt to taste
  • 1/4 cup scallion greens (optional)
  • 1/4 cup shredded coconut (optional)

In a large saucepan combine brown sugar, garlic, butter, and scallion whites and cook about 2-3 minutes until sugar melts. Once sugar melts stir in rice.

Add coconut milk, broth, and 5 ounces of water (enough to make 2 cups of liquid) to rice mixture and wait until it boils. Once it boils reduced to low and simmer about 15 minutes or until all liquid is gone.

Garnish with scallion greens and shredded coconut (optional)
